Pea and mint dip

Ingredients

  • 150 g frozen peas
  • 3 spring onions chopped
  • A few fresh mint leaves can use dill instead
  • 100 g silken tofu
  • Olive oil
  • Salt and pepper

Instructions

  • Simmer the peas and spring onions for 4 minutes and drain
  • Add the peas and spring onions, along with the rest of the ingredients to a blender and blend until smooth
  • Enjoy!
