Pea and mint dip
Ingredients
- 150 g frozen peas
- 3 spring onions chopped
- A few fresh mint leaves can use dill instead
- 100 g silken tofu
- Olive oil
- Salt and pepper
Instructions
- Simmer the peas and spring onions for 4 minutes and drain
- Add the peas and spring onions, along with the rest of the ingredients to a blender and blend until smooth
- Enjoy!
