Bean salad
This recipe helps to enrich our gut flora with prebiotics, increase fibre, and may help with constipation.
Ingredients
- 1 can mixed beans in water drained and lightly rinsed
- 1 small chopped carrot or grated
- 1 tbsp chopped black olives
- 1 tsp capers
- 2-3 chopped sundried tomatoes
- Nutmeg
- Cumin seeds
- Tarragon
- Mixed herbs
- Black pepper
- Tamari soy sauce or other of your choice
- Apple cider vinegar
- Tomato puree
- Olive oil
Instructions
- Mix all of the ingredients into a bowl
- Shake in a sprinkling of nutmeg, cumin seeds, tarragon, black pepper, and mixed herbs and give it a stir
- Add in a good splash of Tamari soy sauce (or other of your choice) and apple cider vinegar
- A squirt of tomato puree
- A glug of olive oil
- Mix all together and top with a sprinkling of dry roasted seeds (optional)
