Bean salad

This recipe helps to enrich our gut flora with prebiotics, increase fibre, and may help with constipation.

Ingredients

  • 1 can mixed beans in water drained and lightly rinsed
  • 1 small chopped carrot or grated
  • 1 tbsp chopped black olives
  • 1 tsp capers
  • 2-3 chopped sundried tomatoes
  • Nutmeg
  • Cumin seeds
  • Tarragon
  • Mixed herbs
  • Black pepper
  • Tamari soy sauce or other of your choice
  • Apple cider vinegar
  • Tomato puree
  • Olive oil

Instructions

  • Mix all of the ingredients into a bowl
  • Shake in a sprinkling of nutmeg, cumin seeds, tarragon, black pepper, and mixed herbs and give it a stir
  • Add in a good splash of Tamari soy sauce (or other of your choice) and apple cider vinegar
  • A squirt of tomato puree
  • A glug of olive oil
  • Mix all together and top with a sprinkling of dry roasted seeds (optional)
