A really quick and easy snack that can be made ahead for the week, these chia energy balls are really versatile and you can add so many different options to the recipe.

Chia energy balls

A really quick and easy snack that can be made ahead for the week, these chia energy balls are really versatile and you can add so many different options to the recipe.

Ingredients

  • 10 chopped dates which have been heated in a little water to create a paste
  • 1-2 tsp molasses
  • 2 tbsp desiccated coconut
  • 2-3 tbsp ground almonds (or ground nuts of your choice)
  • 1 dstp oatmeal (optional)
  • 1 dstp mixed seed mix whole or ground
  • 1 tsp mixed spice
  • 2 tsp cocoa powder
  • Optional extras – adding in some cacao nibs, orange or lemon rind, a little dollop of coconut fat

Instructions

  • Bind all the ingredients together to make a soft dough mixture and leave to rest or a little while – if the mixture seems too dry, add a little coconut fat and chill in the fridge.
  • Roll into balls and use as is or optionally roll in desiccated coconut, cocoa powder or seseme seeds.
