This is delicious as a dessert or as a snack. Serve as soon as possible to reduce oxidation and dullness of colour. Not suitable for home freezing.

Avocado Cream

This is delicious as a dessert or as a snack. Serve as soon as possible to reduce oxidation and dullness of colour. Not suitable for home freezing.

Equipment

  • Blender

Ingredients

  • 1 large ripe avocado
  • 1 kiwi or half pear or half banana
  • 1 or 2 dried unsulphered apricots – you may choose to slightly soak to ease blending (not essential)
  • 1/2 tsp cinnamon

To garnish

  • 1 Handful Seeds or grated chocolate

Instructions

  • Place all the ingredients in a blender and blitz to create a smooth cream
  • Divide into 2 ramekin dishes and sprinkle the seeds or chocolate on top
